Saturated and unsaturated fatty acids

Fatty acids may be saturated (SFA) or unsaturated (USFA) depending on the number of H atoms in the chain. In SFA, all the carbon atoms in the chain are surrounded by H atoms whereas USFA have some H atoms missing, resulting in ‘double bonds’ (C=C) (Figure 1).
